MY FIRST GIVE AWAY!I was going to either sell these or give them to someone else but I decided to give them to one of my followers! They are all 7’s except the first pair on the top row! All the flavor of buffalo wings without messy hands! Perfect for your Superbowl Party. I lightened this using low fat and fat free ingredients. Adjust the heat to your liking and serve this with celery, chips or crackers.

Lighter Buffalo Chicken Dip
Gina’s Weight Watcher Recipes
Servings: 9 • Serving Size: 1/2 cup  Old Points: 3 pts • Points+: 3 pts
Calories: 107.9 • Fat: 4.9 g • Carbs: 5.4 g • Fiber: 0 g • Protein: 10.3 g

  • 4 oz reduced fat cream cheese, softened
  • 1 cup fat free sour cream
  • 1/2 cup Franks hot sauce (or whatever hot sauce you like)
  • 1/2 cup crumbled blue cheese
  • 1 tsp white wine vinegar
  • 2 cups (2 breasts) cooked shredded chicken

Mix the first 5 ingredients together until smooth. Add the chicken and put this in the crock pot on low for 3-4 hours. Serve warm. Makes 5 1/2 cups.

Cupcakes I made using Undressed Skeleton’s Recipe! 160 calories each! (w/o frosting)

Yellow Cupcakes

2 1/4 cups cake flour
3/4 cup SPLENDA® No Calorie Sweetener, Granulated
1/4 cup granulated sugar
3/4 cup softened unsalted butter
1/2 cup nonfat dry milk
2 teaspoons baking powder
3/4 teaspoon baking soda 
1/4 teaspoon salt
3/4 cup buttermilk
3 large eggs
2 teaspoons vanilla extract
1/2 teaspoon almond extract
  1. Preheat oven to 350°F (175°C). Place 18 paper baking cups into muffin pans. Set aside.
  2. Place cake flour, SPLENDA Granulated Sweetener, sugar and softened unsalted butter in a large mixing bowl Mix 1 to 2 minutes with electric mixer set on medium speed, until butter is mixed into flour mixture.
  3. Add nonfat dry milk, baking powder, baking soda and salt. Mix on low speed until blended.
  4. Mix buttermilk, eggs and extracts in a small bowl. Stir well. Add 2/3 of the buttermilk mixture to the flour mixture. Mix on medium speed mixing until the liquids are just blended into the flour mixture. Stop the mixer and scrape the sides and bottom of the bowl. Mix on medium-high speed about 45 to 60 seconds until the batter starts to become lighter in appearance. Reduce mixer speed to low and add remaining liquids. Mix on medium speed until blended. Stop mixer and scrape sides and bottom of bowl again. Mix on medium high speed an additional 30 seconds.
  5. Pour cake batter into prepared pans. Bake cupcakes in preheated 350°F (175°C) oven 12 to 15 minutes or until a wooden toothpick inserted in the center of the cupcake comes out clean.

Makes 18 servings.

Fitness Fridays: Personal Motivation

So while Ive never considered myself a “motivator” i have gotten a TON of compliments recently about people who are motivated by my fitness progress. While I have NEVER shared numbers or weight with anyone other then my trainers, when I had them, I figure if this can help ONE person, I will throw it out there.

January 2011 - I weighed roughly 238 lbs - my body fat was around 30+%

Today, October 7th, 2011, I weighed in at 125.8lbs at 17.0% body fat.

My goal weight was 126.0 when I started in January, and I have passed it. I was 124 this passed weekend, but depending on when you poop, when you weigh yourself in, your water intake, you can fluctuate, so today, i was 125.8. My goal weight 120.00 right now & I will see how I feel then.

I am competing in a fitness show April 2012 - the NPC Metropolitans, and ya know what, if I can do it… no surgery, no crash diets, YOU CAN TOO

Judge me if you want, but at the end of the day, I WIN…you lose =)
